New Delhi: Prime Minister Narendra Modi hosted a special dinner for BRICS leaders and representatives at Bharat Mandapam on Saturday evening. During this, a special vegetarian menu showcasing the different culinary traditions of India was prepared for the guests. Along with the dinner, a special cultural programme named 'Navaras: The Universe of Shared Emotions' was also presented.

However, the absence of Chinese President Xi Jinping at the dinner attracted the most attention. According to sources, Jinping did not attend the dinner and had returned to his hotel to rest. The official reason for his not attending the dinner was not immediately revealed. At the same time, Russian President Vladimir Putin and many other BRICS leaders participated in the dinner. Abu Dhabi's Crown Prince Sheikh Khalid bin Mohammed was also not present at the event.

What was served as a starter?

The dinner started with a special starter. Guests were treated to Khandvi Millefoy, which featured steamed Khandvi made from gram flour with a tempering of mustard, coconut and curry leaves along with saffron mango, microgreens and yogurt dressing.

Apart from this, Khumb Galouti was also a part of the menu. It featured lightly grilled mushroom kebabs served with mint pearls and sheermal bread.

Is there a glimpse of Indian taste in the main course?

The main course included dishes like Paneer Lababdar, Himalayan Gucchi Mushroom and Shatavari. Gucchi Marmik was prepared with saffron, raisins and mamra almonds.

It was accompanied by Carrot Bean Poriyal, Arhar Dal, South Indian style light soup Dhakkali Bele Saru, Mivet Pulao, Beetroot Raita and a variety of Indian rotis.

Did Jalebi enhance the taste of the dessert?

At the end of the dinner, Old Delhi Fruit Cream with Jalebi was served to the guests. It included crispy jalebi with seasonal fruits and light whipped cream. Apart from this, Mulberry Phirni was also a part of the dessert menu.

Through this entire dinner, an attempt was made to present the diversity of Indian food and also the different regional culinary traditions of the country.
