New Delhi: If you are looking to try something new and exciting for your evening snack, you might want to give Jackfruit Nuggets a try. For vegetarians, this dish is often regarded as 'vegetarian meat' because its taste and texture bear a striking resemblance to chicken nuggets. While people typically use jackfruit to prepare a standard vegetable curry, this simple recipe allows you to transform it into a crispy, zesty snack.
The standout feature of this dish lies in its unique blend of spices and its coating. The inclusion of soy sauce and Schezwan chutney lends it a modern Chinese twist, while the breadcrumbs ensure an incredibly crispy exterior. Sourced from 'Kavita Ki Rasoi', this recipe takes just 30 minutes to prepare and is a snack that is sure to win the hearts of everyone—from children to adults.
To prepare this dish, you will need 500 grams of jackfruit. Ensure that you use raw (unripe) jackfruit, not ripe fruit. Other ingredients include 1/4 cup each of all-purpose flour (maida) and cornflour, along with chili flakes, mixed herbs, black pepper, and salt to taste. To further enhance the flavor, Schezwan chutney and soy sauce are added, imparting that distinct "Chinese twist." For the outer coating, you will require half a cup of breadcrumbs.
First, cut the jackfruit into medium-sized pieces. Next, place the jackfruit in a pressure cooker or a pot, add water, salt, and 1 tablespoon of soy sauce, and boil it. Adding soy sauce ensures that a deep color and a subtle savory flavor penetrate deep into the jackfruit, giving the resulting nuggets a professional, store-bought appearance. Boil the jackfruit until it becomes tender, but be careful not to overcook it to the point where it turns mushy.
In a bowl, combine the all-purpose flour and cornflour. Add the chili flakes, oregano, black pepper, and salt to this mixture. Now, add 1 tablespoon of Schezwan chutney to the mixture. Gradually add water while stirring to prepare a medium-thick batter. The addition of Schezwan chutney infuses the nuggets with a spicy and tangy flavor, setting them apart from ordinary fritters.
Now, dip the boiled jackfruit pieces into the prepared batter, one by one. Next, place them on a plate of breadcrumbs and coat them thoroughly on all sides. The breadcrumbs ensure that the nuggets turn out incredibly crispy after frying. If you desire extra crispiness, you can also double-coat them.
Heat oil in a deep pan or wok. Once the oil is sufficiently hot, reduce the flame to medium. Now, carefully place the prepared nuggets into the hot oil. Fry them until they turn a golden-brown color. Frying on high heat can cause them to burn on the outside while remaining raw on the inside; therefore, always fry them over a medium flame.
Your piping-hot Jackfruit Nuggets are now ready. Serve them with your choice of tomato ketchup, mint chutney, or a mayonnaise dip. These make for an excellent snack to accompany your evening tea. If you wish, you can coat them in advance and store them in the refrigerator, then simply fry and serve them immediately when guests arrive.
